Chef Jean Alexandre Galmar is a leading chef in Reunion Island, where he was born. This French territory, slightly east of Madagascar, is famous for its colourful local cuisine, that draws upon the culinary wisdom of it's French, African and Asian cultural influences. This rich culinary heritage provided Jean Alexandre with both the passion and the skills to become one of Reunion Island's leading culinary players, working in some of Reunion Island's top restaurants. In addition to his great domestic success, he has also been invited to share his craft abroad, running restaurant kitchens in China, France and the Seychelles Islands. Jean Alexandre is currently the executive Chef of the restaurant Au Cherry in St Denis.

Q&A

When did you know you wanted to be a chef?
When I was 8/9 years old, my mother asked me "what would you like to do when you will be older". Food taster was the answer! Here I am today, I’m a Chef.

What’s your favourite dish?
Traditional duck stew with vanilla bean from my island. I love mixing local products in meals with all of the techniques and spices I work with.

Dinner

What’s your favourite / most hated vegetables?
I like all kind of vegetables but the difficulty is to know how to cook them in the right way

What's your favourite music to cook by?
Reggae music

What would be your favourite destination/country for culinary experience?
I have worked in France, China and Seychelles islands, I would love to discover India as Indian community is very important in Reunion Island. Other than India, I can’t wait to discover South Africa!

What is your favourite ingredient to cook with?
French fine sea salt and Espelette chili.
